Housed in a magnificent ancient castle dating back to Roman times, though most of the current building is Medieval. A fifth generation family producer making wines only from their own vineyards. Jerome Vic is head of the business and the Minervois is made by his wife Aurélie Vic, a passionate oenologist. She loves the roots of the Languedoc. The region is big and the wines have multiple flavours and profiles. Must they be fresh and tasty? Must they go with Mediterranean cooking? Of course, but Aurélie wants more. Character and balance, delicacy and harmony, and of course, the wine must express and reveal its origins. The wine must talk and link us to the soil… its juice must release Southern flavours, a fruit concentrate and a garrigue perfume, with crispness, fine flavours and drinkability.
